A homemade energy bar packed with good stuff! Great for cyclists, hikers or the unsung office hero! Super easy and quick to make. 

Recipe:

1 part dates, 1 part cranberries (or other dried fruits), 1 part almonds (or nuts, ground or whole) e.g. 1 cup each.  Optional ingredients that are tasty:  Chia seeds,  ground flax-seeds, protein powder. To sprinkle on top: a handful roughly chopped almonds & pistachios.

Method:

Mix all ingredients in a food processor, until it is a pasty texture, about 2 mins and until a ball starts to from. Roll the dough out between two sheets of baking paper (about 1/2cm-1cm thick) with a rolling pin, your hands or a chopping boards, press down hard, then sprinkle with a handful of roughly chopped almonds and pistachios and press again – this looks pretty! Put into the fridge for at least an hour and then cut into the shape you like. Store in airtight container in the fridge – it will keep for about 2 weeks and up to  3 months in the freezer.

Note: your kids might like these bars too! Maybe without the crunchy nuts and pistachios.
