Sweet, a little spicy and healthy at the same time, whats not to love about these oven baked sweet potato fries! A hit with the kids too, so get them to help you out in the kitchen to create their favourite treats.
They are fabulous as a side or served as a snack, with some greek yoghurt or hummus to dip in. Leftovers are also great in a Buddha Bowl, mixed with (leftover) cooked grains and some salad greens and nuts.
Sweet potatoes are packed with the Antioxidant beta-carotin (that is transformed into Vit. A in our bodies), Vit. C, potassium and fiber (especially if eaten with the skin). Thus a highly nutritious food that will keep your energy levels high and your belly happy!
RECIPE sweet potato fries:
Ingredients: (serves 4 as a snack)
2 big sweet potatoes (about 800g, organic and locally grown if possible), skin scrubbed well
3 tbsp. Polenta or Corn Starch or a mix of both (makes the sweet potato fries crisp)
1 flat tbsp. Paprika (sweet) and optional: 2-3 pinches cayenne pepper
4 tbsp. olive oil
1 tsp. Fleur de sel (flaky salt)
Method:
1. Preheat the oven 210° fan.
2. Line two baking trays with parchment paper.
3. Cut the sweet potato into 1- max 1.5cm thick sticks. Tip: Don’t peel the sweet potato if the skin is fresh and healthy looking. Just scrub and wash it very well.
4. Mix the starch/polenta, paprika, salt and oil in a bowl and then add the sweet potatoes and mix through.
5. Then dip the mix onto the trays (incl. all the oil) and spread out into a single layer.
6. Bake for approx. 25mins (stirring once ) until golden brown and crisp.
7. Sprinkle with some more flaky salt to taste. Serve immediately with some greek yoghurt, hummus or Connie's Kitchen Jalapeño Ketchup.
