Thanks to a fusion of different tastes and textures, this Taco dish is an exciting sensory adventure.

Sweet & spicy (plant-based) pulled pork, pickled onions in a zesty orange/balsamic juice, and an indulgent (but healthy) Avocado-Mayo cream, all combine for a symphony of yumminess.

I used planted.pulled from our friends at www.eatplanted.com and I was delighted with the texture, as it is astonishingly close to the real thing. It is also nutritious with it’s high protein content - thus the nutritionist, the chef and the mum in me, are all very excited!

My goal this year is to cut down significantly on animal based products and having tasty options like this planted pulled will help to satisfy the entire family, in a more animal- & planet-friendly, nutritious win/win.



Makes 12 Tacos (for 3-4 as a main course)


Planted Pulled Marinade: 

400g planted.pulled - Natur

3 garlic cloves crushed

6 Tablespoons Soy Sauce

Tablespoon maple syrup

4 Tablespoon olive oil

¾ Teaspoon salt

½ - 1 Teaspoon chilli flakes (more or less depending on how hot you like it)

1 heaped Teaspoon ground cumin (or crush whole cumin in a pestle and mortar)

¼ Teaspoon allspice (= Piment, crush the berries in a pestle and mortar)


In a bowl mix garlic, soy sauce, honey and olive oil, salt, spices, and then add planted.pulled and mix well, loosening up the meat pieces. Set aside and let marinate until you complete the rest of the steps below. The planted.pulled can also be marinated the day before and kept in the fridge.

Orange - Onion Pickle

2 small red onions, cut in very fine slices (1mm, a mandoline slicer works well)

1 organic orange: peel and juice (about 50ml juice, thinly peel off the skin in thin stripes, they are nutritious and yum to eat) 

50ml White Balsamico vinegar (1 part vinegar and 1 part orange juice)

1 Tablespoon All spice berries (Piment, available in Bio-Shops and Coop)

1 Teaspoon brown sugar


Mix all ingredients and put aside. The onion pickle can be done the day before and kept in the fridge.


 

Avocado Cream

2 small Avocados, pitted and flesh spooned out

Tablespoon Connie's Kitchen VAYO 

15g Coriander finely chopped (incl. stems)

2 Tablespoons of lime juice


Add the avocado flesh to a medium sized bowl and mash with a fork. Mix in the lime juice and coriander and lastly stir in the Vayo. Season to taste with a bit of flaky salt and pepper.

 

Preparation of planted.pulled:

Add 2 Tablespoons of olive oil in a heavy large pan and preheat on medium. When hot, add the marinated pulled.planted to the pan and fry for about 10 minutes until browned.  

For serving:

12 Small Corn (Mais) Tortillas warmed up (available from Farmy.ch or Mexican stores). I prefer the small Tortillas made of pure Corn flour (not the wheat flour versions).

2 limes quartered

Optional other additions

White cabbage (finely shredded with a mandolin)

Young spinach or any other salad greens leaves finely roughly chopped

Sprouts
