Homemade Nachos and Guacamole is a super simple comfort food dish and a great one to make with the kids for your (virtual) Christmas Party or family movie night over the holidays.
Layer wholegrain tortilla chips on a wide oven-proof dish (e.g. Linthmais tortilla chips) and generously crumble grated cheddar cheese or a mild gruyere (or Vegan equivalent) over the chips and melt in the oven (grill function, about 5 mins). Watch it closely to avoid burning.
Sprinkle with lots of chopped cherry tomatoes (0.5cm cubes), roughly chopped coriander leaves, fresh mild chillies (deseeded, thinly sliced) and put a generous dollop of guacomole (recipe below) and creme fraiche (or it´s vegan equivalent) in the middle of the tray.
With a teaspoon drizzle some dots of Connie’s Kitchen Jalapeno Ketchup over the chips. Serve with a few lime slices and your Christmas cocktail of choice!
Ingredients Guacamole
Mix all ingredients:
2 ripe avocado (peeled and mushed up with a fork)
2 level tsp. of finely chopped onion
juice of 1 lime
15g of Coriander roughly chopped (stems can be used, chopped very finely)
flaky sea salt (approx. 1/2 tsp.) and pepper to taste
optional: 4 cherry tomatoes finely chopped
In the current context where double dipping is even more of a persona non-grata than normal - you could pre-portion these into individual bowls ;-)
